How do I create a new key signature in my new project ?

I'm just getting to grips with Notion 6. Done a search on 'key signature' in the documentation help and nothing found. Can't for the life of me just 'set' a key signature for the start of the piece as you would do in Sibelius. Could anyone advise. Thanks.
